I love split pea soup- but who are we kidding? It’s good because it tastes like ham!  Let’s call it what it is- Ham Soup.

I have tried many recipes and, so far, this is the best.  It is good with ham hocks- but even better if you have a left over piece of spiral holiday ham!  (and you usually have more meat too!)

Ham soup with croutons

 

 

Ingrediants

1.25 lb split peas

2 ham hocks (or spiral ham core)

2 large onions (diced)

1-2 carrots chopped

3-4 leeks (sliced)

butter/oilive oil for frying

1-2 Tbsp chopped garlic

3 tsp dried Thyme, 2 tspn winter savory, 2-3 tspn sage

1.5 quarts light chicken stock

salt, pepper and cayenne

Put 2 quarts water in large pot with split peas and ham.  bring to boil then reduce heat to simmer, cover, and let cook 2 hours until peas are soft.  stir occasionally.  Remove ham hocks and separate the meat from bone, cutting into small bits and re-add to pot.

Meanwhile, cook the leeks, onion and carrot in butter/oliveoil mixture until soft.  add the dried spices and garlic and cook for 5 minutes more.

add this mixture to the big pot with chicken stock and return to a boil.  Remove from heat and add salt, pepper and some cayenne.
